Juniper berries are the basic and fundamental botanical for the production of gin, juniper schnapps, juniper schnapps, and Kranewitter (a traditional South Tyrolean product). They have a typically sweet and sugary yet fresh flavor and a smooth texture. An essential oil called juniper essence is finally extracted from the Juniper Berries by distillation. The distillation residue treated with water and concentrated under vacuum produces a syrupy liquid called juniper extract.
