It is said that this blend of spices, now well known throughout Europe, originated in the prairies of Estancia, Paraguay. In that region, where meat is the food par excellence, what we now know as roast beef was born, a method of grilling meat that until today has been wrongly attributed exclusively to England. The extensive livestock farming practised in Paraguay, the care taken over the quality of production and the ability to cook meat on the grasslands while grazing, confirm the influence this area has had on the history of this cut of sirloin. It was in these green expanses of unspoilt pastures that the spice mixture used by the camperos to flavour grilled beef was developed.
