The presence of Ancho chilli makes it moderately spicy and suitable for all palates. It can be used to marinate beef before grilling, spit-roasting or roasting. It is also excellent for seasoning stuffing, meatballs and meatloaf. A great BBQ sauce is made by simmering tomato puree with 2 tablespoons of white vinegar, 2 tablespoons of brown sugar and a tablespoon of Tierra del Fuego.
