
Among the most prized and valuable spices (it is the third most expensive spice in the world after saffron and vanilla pods), Cardamom takes the form of a capsule containing many small brown-black seeds in which all the aroma and flavor is contained. For a more intense flavor, in fact, they should be removed from the green husk and used alone while for a more restrained flavor, the entire berry can be steeped. Cardamom is ideal for flavoring coffee and chocolate but is perfect as a cocktail botanical and for flavoring gin.
